Cashew Chicken and Chai Tea

But not together. Yuck. Not so sure I’d want to even try drinking Chai Tea with my Cashew Chicken. However, this blog post is about my two most recent cooking adventures. 1 – Cashew Chicken, a salty and spicy amazing meal. 2 – Making my own Chai Tea Latte at home.

1. Cashew Chicken

I found this recipe online, and by my lack of knowledge wound up getting one ingredient incorrect. But it still tasted FANTASTIC. Just the right amount of salty spiciness. Mmmm I want some right now.¬† Well, the recipe called for “rice wine vinegar” which I thought said “red wine”, so I ended up using red wine vinegar and my husband and I love how it tastes. Rice – Red – they both start with R’s. Here’s a picture of start to finish. The flash caused some of it to look a bit too oily – it doesn’t look quite like that. Cashew Chicken Recipe for Crockpot
2 lbs boneless fresh chicken breast tenders
1/4 cup all purpose flour
1/2 tsp black pepper
1 Tbsp canola oil
1/4 cup soy sauce
2 Tbsp red wine vinegar
2 Tbsp ketchup
1 Tbsp brown sugar
1 garlic clove, minced
1/2 tsp grated fresh ginger
1/3 tsp red pepper flakes
1/2 – 3/4 cup cashews
White Rice

Combine flour and pepper in resealable plastic bag. Add chicken. Shake to coat with flour mixture. If you run out, repeat flour mixture. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken. Cook on LOW for 3 to 4 hours. Add cashews for last 10-15 minutes and stir. Serve over rice. Makes 4-6 servings.

2. Chai Tea Latte

I love my chai tea. And I love my Chai Tea Latte, whether it’s from Starbucks or Einstein Bagels, or a Vanilla Chai Latte from Dunkin Donuts. Mmmm so good. But I get tired of paying for it, and on my days off I’m not going to drive just to get one. I don’t have any machine to make one, what do I do? Stash Tea to the rescue! Now, I didn’t follow exactly what they said on their site, but still it was perfect for me. I don’t have a froth maker thing (see their instructions at the link) nor did I have cinnamon or nutmeg, but I plan to buy some. Ingredients
1 Chai Spice black tea bag
2 cups boiling water
3/4 cup whole milk
Honey or sugar to taste (opt.)
Cinnamon or nutmeg to sprinkle on top (opt.)
Makes two cups

Directions
1. Steep the tea bag in the water for 3 to 5 minutes (I recommend at least 5 for a full chai flavor).
2. Microwave milk for 60-90 seconds.
3. Pour half of the chai tea in your favorite cup/mug leaving room to add the milk
4. Add half of the milk and stir
5. Add honey or sugar to taste (I do three spoonfuls). Sprinkle with cinnamon or nutmeg if you want.
